Sauvignon sur-lie, late harvest, dry, 2017

187  Incl. VAT

Grapes from a vineyard with reduced yield processed by the cryomaceration method – freezing with liquid carbon dioxide to a temperature of about 3-5 ° C and subsequent maceration at this temperature for two days. Wine of light green-yellow color, slightly spicy aroma without otherwise strong aroma substances, with delicate aroma of gooseberry and blackcurrant leaf. The two-thirds of the wine matured for ten months in stainless steel tanks with regular mixing on yeast to give it fullness, one-third for ten months in older French barrique barrels Alier, which enriched them with very delicate aromas and flavors of cinnamon, liquorice, vanilla, butter and cream. Fresh dry wine with crispy acidity and interesting minerality.

Recommendation:

It is suitable with aperitifs or cold appetizers. It goes well with asparagus and goat cheese. It is also suitable for pasta, fish soup or spicy dishes.
