Kněžské tramín QVEVRI 2021

This wine, made from a reduced harvest of 0.96 kg per vine using a technique developed over 8,000 years ago by the first Georgian winemakers, belongs to the category of so-called “orange wines.” The destemmed berries fermented and aged for 6 months in an authentic Georgian clay QVEVRI vessel, with a portion also aged in a NICO VELO concrete tank, without any additives or sulfur. The wine was then transferred to barrels, where it aged for another 3 months, and bottled without any additives or filtration. A wine of topaz to amber color with golden highlights, a very intense aroma of rose petals to peonies, and a palate featuring notes of sweet spices with a touch of honey, dried apricots, and overripe peaches, with pronounced sweet tannins resulting from long maceration with grape seeds. Thanks to its structure, tannin content, and astringency, it pairs excellently with rich, spicy, and earthy dishes, roasted meats, and spicy Asian cuisine.
