Grapes from a vineyard with reduced harvest with a sugar content of 22.5 CNM. The wine was first fermented with the non-saccharomyces yeast METCHNIKOWA, then with a neutral species of saccharomyces yeast. It was fermented and aged 2/3 of the volume in stainless steel tank, 1/3 of the volume in used barriques. It was then aged in stainless steel tanks for 6 months on fine lees, and in barrels on all lees for 9 months despite the use of sulphur dioxide. The wine is pale yellow to greenish-yellow in colour with aromas and flavours of citrus fruits, yellow melon and citrus fruits, with a biscuit aftertaste. The wine has harmonious acidity and a slight sugar residue of 2,6 g/litre. Despite the high sugar content and the overall ripeness of the grapes, it is classified as a quality wine.
For creamy soups, white meat dishes, cream sauces and pâté.
