Stará hora Cabernet Sauvignon, Moravian dry wine 2021

This wine is made from grapes grown in the 22-year-old Stará hora vineyard, with a reduced yield of 0.8 kg per vine. It fermented in open vessels with daily pumping over of the must, and remained in contact with the skins for another 14 days after the completion of alcoholic and malolactic fermentation, then aged for 1 year in Mercurey GC 3Y and Seguin Moreau Caucas M+ barrique barrels. Dark red color with garnet highlights and a narrow, lighter rim. Excellent viscosity. The aroma is intense and concentrated, with notes of ripe wild blackberries, black currants, and sweet spices. On the palate, it is a full-bodied, extractive wine; its character corresponds to the strong aroma, and the flavor is complemented by undertones of noble wood, with a long finish. It pairs excellently with pasta and wild boar ragout.
