Grapes from a vineyard with a reduced harvest, the wine was first fermented with non-saccharomycent yeasts METCHNIKOWA, then with saccharomycent yeasts of the thiol type. It was fermented and aged in 2/3 of its volume in stainless steel tanks, and 1/3 of its volume in used barriques with glass fronts. It was matured for 9 months in the barriques on all yeasts, and for the same period in the stainless steel tanks on fine lees. The wine is light greenish-yellow in colour, with a distinct aroma of elderberry, gooseberry, blackcurrant, with interesting thiol undertones, refreshing acidity and residual sugar of only 0.3 g/litre.
