The grapes come from a vineyard with reduced yield. They are processed by controlled fermentation technology including malolactic fermentation followed by maturation in new barrique barrels of French oak Alier, produced for the variety, for a period of 24 months. Wine of dark red color with a shade of peony, with very good viscosity. Distinctive aroma with tones of ripe spices and stone fruit. Spicy flavor with hints of plums, cinnamon and sweet wood. Bottle maturity with a long aftertaste. Not filtered.

Recommendation:

Best with fine pâtés, roe deer or deer ragout, veal kidneys, feathered game dishes or dishes with a strong tomato flavor, Emmental cheese.
