Winery DVOŘÁČEK LTM - Kosher víno

Winery DVOŘÁČEK LTM, s.r.o. became the second producer of kosher wine in the Czech Republic in 2005. The wine is produced in Moravia after over 60 years of interruption under the supervision of the Jewish community in Brno-specifically, rabbi Mosche Chaim Koller. The wine produced by Ing. Dvořáček entitles the producer to use the attribute „not yaiyn mevushal“ (unpasteurized) due to gentle processing without the use of any additives and without the process of pasteurization, an attribute that is essential for orthodox consumers, i.e. those who strictly follow the Torah. Any type of heat treatment deteriorates the taste Kosher korekof wine, therefore kosher wine is usually very valued. The wine is approved to be used for „šel Pésach“ („Kosher for Passover“) – i.e. an important Jewish holiday. From the 2004 production, two batches of wine were made - white Chardonnay, a selection of berries and a dry quality, red St. Laurent wine. From the 2005 production only the red wines were made: St. Laurent (quality dry), Cabernet Sauvignon (quality dry), and Cabernet Moravia (late harvest, dry). The production 2006 only gave the white dry Chardonnay, a late harvest, and two types of dry red wines- Blue Port, quality and Cabernet Sauvignon quality.

According to Jewish tradition, wine is required to meet high standards, as it is, along with other gifts, sacrificed at services in temples. In the Bible, the wine has been referred to as a source of pleasure for mankind and a means of gaining wisdom. Therefore it occupies a foremost place in the Jewish liturgy and the process of its production is accompanied by strict requirements. The production of kosher wine – that is all activities from the moment when the grapes start producing juice ( rmut) – and up until the moment when the wine is bottled, must only be performed by pious people. It is understood that the wine must be of the highest quality, therefore our winery tries to avoid any kind of flavouring – only completely flavour-free kosher wine will find its way to the altar. Only carefully chosen types of yeasts for controlled fermentation (approved by the European Rabbi in France) are allowed to be used along with bentonite. In the case of sweetened quality wines only beet sugar made in a carefully chosen beet sugar factory which fulfills the strictest requirements, is allowed. As far as the stabilizing agents are concerned, our winery only uses sulphur dioxide.

From the very moment when the grapes have been transported from the vineyards its production is in the hands of a rabbi. The production uses very special equipment which has been acquired only for the purpose of making kosher wine – a lockable box with stainless steel tanks, special hoses, wine pump, and, in case of need, a filling machine and filter as well. After the rabbi has filled the wine in the bottles, each bottle is closed with a cork stopper, sealed with a shrinking capsule, and marked with a label. We consider our production of KOSHER wines rather unique as it is probably the first one implemented in a non-Jewish locality. Before the KOSHER wine production started, the whole production process, including the technology and equipment used, had been approved by the Israeli Rabbi Menachel Kalchaim.
