Winery DVOŘÁČEK LTM, s.r.o. (Lubomír, Tomáš, Martina) is a small family business that has been engaged in grape growing and quality wine production for over two decades. As the name suggests, the business is owned by Lubomír Dvořáček from Mikulčice and his adult children – Tomáš and Martina. As a member of the COLLEGIUM VINITORUM association from Moravska Nova Ves the owner has been producing high-quality wine since 1996 and on a professional basis since 2000.

COLLEGIUM VINITORUM is an association of wine makers from the villages of Moravská Nová Ves and Mikulčice located in the southernmost part of the viticultural region of Podluží. The roots of the association date back to 1968 when a group of wine makers began their regular meetings with the intention to evaluate their wines, in order to avoid mistakes, imperfections, and to make the best possible wine.

In 1998 the association agreed on the common use of the same label, advertisements, promotional activities, and wine offerings.

A contract for the open association was finalized and its trade mark was registered in the year 2000.

The members of the association specialize in the production of high-quality Moravian wines. The established principles are followed not only during wine making but also during the grape growing season. Only the best young plants are used for planting vineyards. The plants are cut to have no more than one trunk and one horizontal spur. Older vineyards are grassed and all vineyards are fertilized with either organic or green manure. Before chemical protection is applied we always closely monitor the presence of various diseases and pests, while respecting the principles of integrated production. The yields are strictly reduced and the harvest itself is put off as late as possible in order to reach our desired sugar content. State-of-the-art technologies are utilized in wine-making so that the final product is of the best quality.

Each wine produced under the common label must pass an evaluation process in order to secure the highest quality of offered wines. The association‘s foremost mission is to produce a unique natural drink. The association COLLEGIUM VINITORUM has 15 members, working on more than 15 hectares of vineyards and producing more than  80.000 bottles of wine annually.

Lubomír Dvořáček started cultivation in 1985 on 12 ares of his own vineyards. In 1996 he rented more vineyards and another approx. 40 ares were planted between 2001 and 2002 in route Kněžské, a wine village of Mikulčice. In 2007 he bought more than 1,2 young vineyards in the village Moravská Nová Ves in the vine way Stará hora. Recently he manages only his own vineyards which extend on 2 hectars of land. Winery DVOŘÁČEK LTM, s.r.o. currently processes an annual amount of about 18 to 24 tons of grapes in four white and six red species. The grapes are harvested always in the top quality and are the base for the production of top wines of the assortment pyramid– the long-term average yield from our own vineyards does not exceed one kilogramme per shrub. Annual production tops at 15,000 to 20,000 bottles, mostly dry wines with special attributes, including ice and barrique wine. The entire production is bottled – we do not merchandize barrelled wine. The Winery consists of a modern air-conditioned processing and storage area, a wine-cellar with a tasting room for 15 to 25 people where, along with an instructed degustation and refreshment session, a dulcimer band may perform (with the owner playing the dulcimer). The accomodation can be arranged in boarding houses in Mikulčice, Moravská Nová Ves or in near-by Hodonín, including transportation to the cellar and back.

Winery DVOŘÁČEK LTM, s.r.o. is currently specializing in the cultivation of 10 basic varieties. White species are Sauvignon, Chardonnay, Ryzlink Rynsky and Traminer, red species are Blue Port, Cabernet Moravia,Cabernet Sauvignon, Zweigeltrebe, Merlot and Pinot Noir. Since 1988 Lubomír Dvořáček has gained over twenty gold medals and diplomas at regional exhibitions. The following prices are examples of his best achievements: a diploma from VINOFORUM 1999 (Cardonnay 1998, late harvest); top level results at VINEX 1999  (Chardonnay 1997, late harvest) and SAUVIGNON-FORUM 1999 (Sauvignon 1997, late harvest); golden medal from ZNOJMO GALLERY OF VELTLINERS 2000 (Green Veltliner 1999, late harvest); silver medal from SAUVIGNON-FORUM 2000 (Sauvignon 1999, selection of berries); the top wine of the variety – Regional Exhibition in Šatov 2001 (Blue Portugese 2000, quality wine) and a gold medal from VINOFORUM 2001 (Blue Portugese 2000). We supply various spa establishments and hotels (Grands Vins Mercure 2004) our main direct customers are approximately two dozen regular VIP buyers.

Winery DVOŘÁČEK LTM, s.r.o. became the second producer of kosher wine in the Czech Republic in 2005. The wine is produced in Moravia under the supervision of the Jewish community in Brno—specifically, Rabbi Mosche Chaim Koller - after over 60 years of interruption. The wine produced by Ing. Dvořáček entitles the producer to use the attribute „not yaiyn mevushal“ (unpasteurized) due to gentle processing without the use of any additives and without the process of pasteurization, an attribute that is Essentials for orthodox consumers, i.e. those who strictly follow the Torah. The wine is approved to be used for „šel Pésach“ („Kosher for Passover“) – i.e. an important Jewish holiday. From the 2004 production, two batches of wine were made - white Chardonnay, a selection of berries and a quality dry, red St. Laurent wine. From the 2005 production only the red wines were made: St. Laurent (quality dry), Cabernet Sauvignon (quality dry), and Cabernet Moravia (late harvest, dry). The production 2006 only gave the white dry Chardonnay, a late harvest, and two types of dry red wines- Blue Port, quality and Cabernet Sauvignon quality. From the 2008 harvest we have again two types, Chardonnay, attributed late harvest dry, and Cabernet Moravia quality dry.
